Whether you’re working in a restaurant, looking to feed a family of four or regularly whipping up dinner for one, baking sheet pans are a kitchen must-have. For home cooking, a so-called half-sheet pan (measuring 18x13 inches on average) will generally do the trick: made of aluminum or stainless steel, surrounded with a rim to prevent spills, and purchased either with or without a nonstick coating. Of course, there are other factors that make certain pans stand out from the crowd. Read on to find the very best vessel for your cookies, focaccia or sheet pan suppers!

What to Know Before Buying Sheet Pans and Cookie Sheets

  • Material matters. Whether you're using baking sheet pans for cookies, dinner or bread, choosing the right material for your project is imperative. Nonstick may perform better on delicate sugar cookies, while you want an aluminum option for roasting veggies at a high temperature.
  • Have an option for the broiler. Nonstick and coated pans may not all be safe to use under a broiler. Opt for an aluminum option for anything you need to finish under the broiler, like chicken Parmesan.
  • Textured pans can help with crispiness. You can find sheet pans with textured surfaces that are designed to help with air flow and amp up the crispiness on food. Use these for foods like Brussels sprouts that are better with a crispy exterior.

What's the Difference Between a Sheet Pan and Cookie Sheet?

While both sheets can be used for baking, there are a few notable differences. Many standard sheet pans come with rimmed sides that make them better for baking breads like focaccia or tossing sides like crispy Brussels sprouts. Cookie sheets are designed with a tapered edge allowing baked goods to slide off of them and onto a cooling rack. The tapered edge also allows for more air circulation around the cookies, which could make for a more even, faster bake. You'll also find many cookie sheets are made with an insulated design, meaning there is some space between the two pieces of metal, which keeps the cookie bottoms from overbrowning. Those differences aside, both baking sheets and cookie sheets are great tools to use for cookie baking.

How We Tested

We consulted consumer buying guides to find 17 well-regarded sheet pans. After evaluating their materials and build, to see how much they weighed and how sturdy they were, we checked out any specific instructions regarding care, such as whether or not the pans needed to be pre-cleaned, what kind of utensils could be used on the surfaces, and how high a heat they were able to withstand. Then we put them to work in the oven! We made sheet pan favorites such as cookies, pizza and Brussels sprouts, to see how evenly they cooked and browned on the bottom, if anything stuck, and if the pans warped during the baking process. We also noted if any of the brand’s special claims bore out, in regard to being warp-free, quick-release, scratch-resistant and/or dishwasher-safe. Afterward, we hand-washed all the pans first, to see how easy they were to scrub, before giving them a pass through the dishwasher.

Consider this your workhorse pan. Most similar to the kind used in our test kitchen, these lightweight, warp-resistant aluminized steel pans have an uncoated surface, which means you can really use and abuse them, without worrying about disturbing the finish. During testing, we found that they conducted heat evenly, browning — not burning — the bottoms of our cookies and pizzas, while still thoroughly cooking the tops. An encapsulated galvanized steel rim adds reinforcement and prevents warping while an aluminum base ensures even heat conductivity, which was apparent in all of our tests — cookies and pizza had golden-brown bottoms, and Brussels sprouts were crispy and evenly cooked. We’re not biased about Food Network branded cooking equipment in our testing — this non-stick, carbon-steel baking sheet went through the same process as the others and did quite well. Thanks to its textured bottom, which allows for more air flow, the Brussels sprouts were wonderfully crispy, while the pizza and cookies all had bottoms that were evenly golden-brown. Those raised ridges also make cleaning a breeze — crusted on cheese and cookie crumbs were washed away without much effort. It’s the perfect sheet pan for the cook who resents clean-up. Ideal for your messiest, stickiest cooking projects, a silicone-based coating allows everything from jam-filled bar cookies to cheesy pizza slide seamlessly from the pan. And while that means you won’t need to pick at congealed drips with sharp implements, it’s also the only nonstick pan we tested that’s safe with metal tools. Additional points in its favor: The Chicago Metallic Professional Half Sheet conducts heat evenly, a wire rod-reinforced lip prevents warping, and it’s even dishwasher safe, although hand-washing is generally preferable, to extend the life of the product. That said, at this price, you won’t have to break the bank replacing it.

The best cookie sheets should be lightweight, durable and slick. We love this option from Williams Sonoma because it felt strong and sturdy in our hands, with an ample space to grip even when wearing thick oven mitts. It’s made from aluminized steel that’s nonstick and super slick, so the cookies we baked easily came off the pan without leaving any bits stuck to the surface. The reinforced edges make it extra-resistant to warping, and the flat surface is large enough to allow for ample space between cookies.

During our testing, we found that some pans yielded cookies that were flat and sunken. However, this pan yielded cookies that had a rounded, domed center with gentle browning around the edges and a perfectly-cooked center. Each cookie was baked consistently, so the cookies on the outer edges of the pan had the same level of browning as cookies in the center of the pan. Though the cookies didn’t slide off freely, they were very easy to remove by hand or with a silicone spatula. Though this cookie sheet is dishwasher-safe, the brand recommends washing it by hand in order to prolong the life of the nonstick coating. As is the case with any piece of nonstick cookware, it’s best to use silicone or wooden utensils to prevent scratching.
