How to Pipe and Fill Cookies

Royal icing — that stiff icing you make for gingerbread houses — does double duty for these festive cookies.

Step 1

Start with your holiday cookies, baked and cooled.

Step 2

Using thick royal icing, pipe a line around the outside of each cookie.

Step 3

Thin the icing with water, and stir well …

Step 4

… until it’s pourable.

Step 5

Carefully pipe it inside the outline you made with the stiffer icing …

Step 6

… until the whole cookie is covered.

Step 7

Once that’s dry, keep decorating. Add another layer of royal icing lines, or …

Step 8

… add dragees or nonpareils.

Step 9

Let it snow!
